It seems that Lima is set to attract numerous fine-dining enthusiasts in the upcoming months.
Two restaurants in the Peruvian capital have secured spots in the top 10 of the 2025 “World’s 50 Best Restaurants” list, including the prestigious number one position.
The awards, often referred to as the Oscars of cutting-edge fine dining, were presented during a ceremony in Turin, Italy, on Thursday night, with Lima’s Maido taking home the top honor.
Previously ranked fifth on last year’s list, Maido is owned and operated by chef Mitsuharu “Micha” Tsumura.
Maido specializes in Nikkei cuisine, which “blending meticulous Japanese techniques with vibrant Peruvian ingredients to create a dining experience that is both culturally rich and innovatively modern,” as stated by the 50 Best organization.
“This is going to be 16 years of Maido,” Tsumura remarked while receiving the award.
“I think gastronomy — food and hospitality — can do amazing things. They can make dreams come true.”
In second place was Asador Etxebarri from Atxondo, Spain, and Quintonil from Mexico City came in third. Diverxo from Madrid (No. 4) and Alchemist from Copenhagen completed the top five.
Relocating to Asia, Bangkok stood out as the major victor of the evening, with six restaurants making it into the top 50 list, including Gaggan, which ranked sixth.
Following closely at number seven was Sézanne from Tokyo, with Table by Bruno Verjus in Paris taking the eighth position. Kjolle in Lima secured the ninth place, while the tenth spot was held by Don Julio in Buenos Aires, maintaining its position from last year.
The sole US restaurant to feature in the top 50 was Atomix from New York, which claimed the 12th position and also received the “Outstanding Hospitality” award at the recent James Beard Awards.
In addition, the Thai capital celebrated the highest new entry in the top 50 — Potong, a Bangkok restaurant, achieved the 13th position this year in its first appearance on the list.
Established in 2021 in the Chinatown district by chef Pichaya “Pam” Soontornyanakij, Potong is located in a historic five-story building that has been home to the family’s Chinese herbal medicine business since 1910. Its creative tasting menu, which showcases Thai-Chinese cuisine, has quickly garnered a loyal following and a Michelin star.
Ikoyi, a restaurant in London, earned the highest climber award by ascending 27 spots from the 2024 list to reach number 15 this year. Known for what 50 Best describes as “category free cuisine,” it also won the One To Watch prize in 2021.
Ikoyi has since relocated to The Strand in London, where guests can savor its signature dish — smoked jollof rice — from a menu inspired by sub-Saharan West Africa.
The top 50
The yearly ranking is created from the votes of the World’s 50 Best Restaurants Academy, which consists of 1,080 global restaurant industry professionals, including chefs and food critics, across 27 regions worldwide.
Restaurants are eligible to win the top award only once; after that, they are included in a distinct “Best of the Best” program.
Members of this prestigious group include Geranium and Noma in Copenhagen, along with New York’s Eleven Madison Park, The Fat Duck near London, Osteria Francescana in Modena, Italy, Mirazur in Menton, France, and Central in Lima. The previous year’s winner of the “50 Best Restaurants,” Disfrutar from Barcelona, is also now part of that list.
